KARONDE AUR HARI MIRCH INSTANT PICKLE RECIPE





Karonde is a seasonal fruit which we get around the months of July and August. It is usually used to make pickles and chutneys.
My mother used to make this Karonde quite often during the season. She used to make different varieties sometimes sweet and sour, sometimes by adding green chillies to cut the sourness.




I just loved Karonde and Hari mirch combination as it would just lift the simple dal, roti, subzi to another level and makes it so interesting.
Karonde and hari mirch tastes very well with simple and plain parathas too. This karonde and hari mirch recipe can be made and stored in the refrigerator for upto a week.
So go get some karondas and make your own Instant pickle before the Karondas go out of season.



INGREDIENTS

Karonde 100 gms
Fresh Green Chillies 4-5
Oil 2 table spoons
Heeng 1/4 tea spoon
Kalonji (Onion seeds) 1/2 tea spoon
Jeera (Cumin seeds) 1/2 tea spoon
Saunf (Fennel powder) 1 table spoon
Lehsun (Garlic grated) 1 table spoon
Haldi (Turmeric powder) 1/2 tea spoon
Dhaniya Powder ( Coriander powder) 1 tea spoon
Salt 1 tea spoon

METHOD

1. Wash and cut the Karondas into half and keep aside. wash and cut the green chillies too into small pieces or split lengthwise.
2. In a pan heat oil, add heeng, jeera, kalonji, lehsun and saunf. Fry till the raw smell of garlic goes.
3. Add the green chillies, haldi powder, dhaniya powder and salt. Mix everything well.
4. Add the karondas and mix everything very well.
5. Cover and cook for 5 minutes.
6. Open the lid and cook for another 1-2 minutes.
7. Karonda's would have turned soft by now. Switch off the gas. 
8. Serve the Karonda and Hari mirch instant pickle with parathas or simple dal chawal.

PICTORIAL GUIDE

WHOLE WHEAT OATS ALMOND AND RAISINS COOKIES





Cookies are a favourite with kids and when they are filled with the goodness of whole wheat, oats, almond flour and raisins, you would not hesitate before handing over an extra one.

Every evening before they go out to play a glass of milk with some cookies to munch on is the go to snack for my kids. It doesn't fill their tummy a lot but at the same time gives enough energy for cycling and doing all the running around and playing with their friends.



The oats in these cookies add a little bit of crunch and the raisins make them a bit chewy. So these cookies are not very crispy ones but a bit chewy which are loved by my kids.

INGREDIENTS

1/2 cup Whole wheat flour
1 cup Oats
3/4 cup Almond Flour
1/2 cup Butter
1/3 cup powdered sugar
1 Egg
1-2 table spoons milk
1/2 tea spoon baking powder
1/2 tea spoon vanilla essence
1/2 tea spoon Cinnamon powder
1/4 cup Black raisins



METHOD

1. Beat the butter and sugar together in a bowl.
2. Add the egg,vanilla essence, milk and beat again.
3. In a bowl add oats, almond flour, whole wheat flour, cinnamon powder and baking powder.
4. Add the dry ingredients to the wet ingredients. 
5. Add the black raisins and bring everything together like a dough with the help of a spatula.
6. Keep the dough in the fridge for 30 minutes. You can even prepare the dough and keep it in the fridge overnight.
7. Take out the dough and shape them into small balls. Press a little to flatten a bit.
8. Preheat the oven to 180 degrees. Place parchment paper on the baking tray.
9. Place the cookies leaving a little distance between them. See that the cookies are almost of the same size. This helps in even baking of the cookies.
10. Bake the cookies in a pre heated oven for 18-20 minutes.
11. Check the base of the cookies to check if they are done.
12. Once done let the cookies cool completely on the baking tray. Once completely cooled you can store them in air tight containers.

COLD COFFEE






For all the coffee lovers. Summers are the best time to have chilled cold coffee with a dash of whipped cream.
Though I'm not a very avid coffee drinker but when I do drink it I love it chilled with a dollop of cream on top and nicely frothy and creamy.

Of course most of us make cold coffee at home so I'm just sharing the way I love it at my place.
Cold coffee serves as a nice summer refresher to go with your breakfast or replace your evening tea time with this chilled and refreshing beverage.






INGREDIENTS

Makes 2 glasses

2 glasses chilled milk
1 table spoon instant coffee powder
4 table spoons of warm water
2 to 3 table spoons of powdered sugar or as per your requirement
4 to 5 ice cubes
1/4 cup whipped cream (optional)

METHOD

1. I mostly mix my coffee powder with warm water first and then use for making cold coffee. You can also add it directly with all the ingredients in the blender.
2. In a blender add milk, sugar, coffee mix.
3. Add ice cubes. Blend everything well till it becomes frothy.
4. You may swirl chocolate sauce around the rim of the glass.
5. Pour cold coffee in the glasses.
6. Top it with whipped cream. Decorate with chocolate sauce and chocolate vermicelli.
