This is the simplest chocolate cake that I've ever made. I say this because this chocolate cake uses very basic ingredients and also not much of beating is required, I only used a hand whisk to beat the ingredients. It is an eggless chocolate cake which uses oil instead of butter and is super moist.
This makes a very small cake around 5 inches, if you want a bigger cake just double the ingredients and follow the rest of the instructions as it is.
I've made this cake many times and frosted and decorated it differently every time. It tastes well even without any icing or you can just drizzle a bit of chocolate sauce over it and relish it.
INGREDIENTS
All purpose flour/ maida 85gms or 3/4 cup
Sugar 100gms or 1/2 cup
Cocoa powder 2 table spoons
Baking Soda 1/2 tea spoon
Salt 1/4 tea spoon
Oil 1/4 cup
Vinegar 1 table spoon
Vanilla Essence 1/2 tea spoon
Coffee 1/2 tea spoon (optional)
Water 1/2 cup
METHOD
1. Grease and dust a 5 inch cake tin and keep aside.
2. Sieve the flour/maida , cocoa powder, baking soda, salt 2-3 times and keep aside.
3. Mix coffee with water and keep aside. I add coffee to hot water so it mixes nicely and then let it cool to room temperature.
4. Beat the sugar and oil with a hand whisk. Add vinegar and essence to it and beat again.
5. Add half of the sifted dry ingredients and half of the coffee mix and mix till everything comes together.
6. Repeat with the remaining ingredients. Mix everything nicely till everything comes together.
7. Transfer the batter to the greased baking tin and bake in a preheated oven at 180 degrees for 30-35 minutes.
8. Check with a tooth pick or a wooden skewer, if it comes out clean the cake is done. Oven temperature differs for each oven so keep an eye on the cake after 25 minutes.
