MICROWAVE VANILLA CHOCOLATE CAKE




The first post that I’m sharing with you is the first cake that I made in my newly bought oven after marriage. Though I pestered my husband to buy me an oven with convection mode because I wanted to make pizzas and cakes but for quite a few years it was only used for heating food and of course making this very easy cake which gets cooked in 4 minutes. That is why I love it. This is perfect for that instant sweet craving. I’ve also used it in desserts, layering it with custard, cut fruits, nuts or simply with ice cream and chocolate sauce.



Ingredients

Eggs  2

All purpose flavour(Maida)  ½ cup

Sugar  ½ cup (powdered)

Oil   ½ cup

Milk  ¼ cup

Baking powder  1 tea spoon

Vanilla essence  1 tea spoon

Cocoa powder  1 table spoon

My one cup measures 240 ml



Method
1.       Sieve maida and baking powder and keep aside.
2.       Beat eggs and sugar nicely till the mixture becomes fluffy. Add essence to this mixture.
3.       Add oil to the beaten sugar-egg mixture. Mix it well.
4.       Fold the maida and baking powder mix to the oil-egg-sugar mixture gently with a spatula, till all the flour is used.
5.       Add milk to get a little to get a soft dropping consistency.
6.       Divide the batter into two equal parts.
7.       Add 1 table spoon cocoa powder to one part and mix nicely. Keep the other one as it is.
8.       Grease a microwave safe bowl. Start putting the batter by alternating between vanilla and chocolate to give a marble effect.
9.       Microwave it uncovered for 4 minutes. Let it stand in the microwave for about 5 minutes.
10.   Once cooled serve it with chocolate sauce.
Notes
1.       To make a vanilla cake out of it omit the cocoa powder. To make a chocolate cake out of it add 1 table spoon of cocoa powder to this recipe (that makes it 2 table spoons of cocoa powder in all) and 1 table spoon of powdered sugar to it.
2.       Use powdered sugar or else it might burn on microwave mode.
3.       While adding the flour do not use a beater. Mix it with your hands using a spatula.
4.       Quantity of milk can be adjusted according to the consistency of the batter.
Do not microwave it for more than 4 minutes.
